Instant Pot Pollo Con Mole paro sin Chocolate

Chicken with mole but without chocolate made in the instant pot
I know it seems crazy to not put chocolate into your mole sauce but this one has its reasons. I wanted a recipe that was out of this world but I'm super picky about mole and its gotta have the perfect chocolate which is hard to get in most places. Soooo this is what I came up with.
Serve it with Mexican rice and you'll be in heaven!

Ingredients:
2-4 pounds of skinless chicken thighs about 8-10
Kosher salt and black pepper to taste
2 tbsp butter
2 tbsp olive oil
1/2 large onion or a medium onion diced
4 cloves garlic minced
1/2 tbsp cumin
1/8 tsp cinnamon
1/2 tsp oregano
1/2 cup chicken broth
8 oz tomato sauce
10 oz can of rotel
1 tbsp cornstarch and 1 tbsp of water for a slurry
Instant pot


Turn your instant pot to Saute then while its heating up season each side of your chicken with salt and pepper. once your instant pot is hot add the olive oil to the pan and start placing your chicken in to brown in batches, you don't want to over crowd the pot. once you have gotten some nice color to the chicken place the chicken aside on a plate. Add in the butter then the diced onion and soften then add in the garlic and the spices, making sure to scrap the bottom of the pot as you stir. then add in the chicken broth and really try to deg-laze the pot so that you can ensure the pot comes to pressure properly. Add in the can of rotel and the tomato sauce. Mix together well then place the chicken back in the pot and put the lid on. cook on high pressure for 8 minutes Natural pressure release for 10 minutes. Release the remaining pressure and then remove the lid. remove chicken and place on serving platter/bowl. Turn your instant pot to saute and start to bring to a boil then you want to add in your slurry to thicken it up a bit. If you like you can also take an immersion blender to smooth out the sauce. pour over the chicken and serve. serves 4-6
