This recipe is basically for the Instant pot only, I haven't tried this any other way.
6-8 Chicken Pieces (bone in and skin on)
1/4 cup of water
1/2 cup coconut Aminos
2 tbsp honey
2 tbsp brown sugar
2 tbsp rice vinegar
2 cloves garlic minced
2 tbsp ginger minced
1/2 Onion diced
3 green onions sliced for garnish (optional)
2 tbsp of arrow root powder or corn starch
2 tsp of water

mix water, coconut aminos, honey, brown sugar, rice vinegar, ginger, garlic and diced onion in a bowl then place in instant pot, put chicken in pot and cook on Manual for 8 minutes on High pressure with 10 minutes natural pressure release. Place on sheet pan and place in broiler for 7 mins then remove and and turn chicken over and put back in the broiler for another 7 mins.
While the chicken is in the broiler turn your instant pot on saute mode to reduce the cooking liquid.

After you have removed the chicken from the oven place the chicken on a platter. Your liquid in the instant pot should be boiling right now so mix your corn starch or arrow root powder with water to make a slurry and pour into the boiling liquid while whisking, this is to thicken the sauce. Once the sauce has thickened spoon over the chicken and garnish with green onion slices and serve.
