Apple Crumble

Growing up Apple Pie was always asked for and I loved it, to this day I crave it but because we try to eat very little gluten in our house, pie crust is just out of the question. So I came up with this scrumptious Apple Crumble. My family loves this and asks me to make it once apple season arrives. The best part of this recipe is you can use any apple you like and never have to worry about having the right one.
APPLE FILLING:
6-8 medium to large apples of any kind, peeled and sliced
1/2 cup sugar (I use evaporated cane juice)
2 tsp cinnamon
2 tsp pumpkin pie spice
2 tbsp corn starch or arrowroot powder
1/2 cup apple juice
1/2 cup butter
CRUMBLE TOPPING:
1 cup Quick cooking Oats (I use gluten free but what ever you have will work)
1 cup Almond flour or any nut flour
1/2 cup butter (cold)
1/2 cup brown sugar or coconut sugar
1/8 tsp sea salt
1 tsp cinnamon
1 tsp pumpkin pie spice

Peel and slice all your apples and set aside.

In a large pan over medium heat melt your butter.

Add your apples to your pan along with all the ingredients except apple juice and cornstarch.
Cook apples until tender then mix corn starch and apple juice together to form a slurry and pour into the apples in the pan, cook until bubbly and the mixture is thick. then pour into a well greased 9x13 inch casserole dish set aside.



In a large bowl combine Oats, almond flour, spices and sugar then add in the butter that has been cut into cubes and cut into mixture to form in to a crumb topping.
Sprinkle over the top of the apples evenly.
Bake in a 375 degree oven for 45 mins.
serve with whipped cream or your favorite Vanilla ice cream.
